Fall Farming

Hello Friends of the Farm!

It doesn't matter how careful you are, you can never control the weather.  As we welcomed September and it's beautiful sunshine, last night left us with a significant frost.  Despite a 4:30 am row covering over the non-hardy vegetables, there was still some damage.  While the tops of the beans, tomatoes, and zucchini were shriveled, we feel fortunate that they were not hit worse.  Most likely the beans and tomatoes will survive.

Given the sudden burst of Fall like weather, we are leaving you with a farm soup recipe.

Zucchini Soup
Ingredients -
1 medium onion, sliced
8 cups zucchini, sliced
1 1/2 cup chicken broth
1 1/2 teaspoon curry powder
1 1/2 teaspoon salt
1/4 cup butter (optional)

Put zucchini, onion, and broth in a large pot and simmer until soft.
Add curry powder, salt, and butter and stir well.
Let mixture cool, then puree in blender in batches to make a creamy style soup
