Early Summer CCF Kale Salad

It's kale season! Kale, a dark colored green is considered to be a "super food" because it is densely-packed with vitamins and contains high levels of antioxidants.   In fact, 1 cup of chopped kale contains 200 percent of your daily value of Vitaman A, about 135 percent of your daily value of Vitamin C, and almost 700 percent of your daily value of Vitamin K.  Antioxidants are substances that have shown to slow/prevent the spread of free radicals (chemicals that can cause damage to bodily cells).  Also, unlike lots of other garden greens, kale is very heat tolerant and can handle these hot summer time temperatures and still taste good!

- Red Russian kale (can use Vates or any other curly leaf kale)
- Dried pecans
- Shredded cheddar cheese
- Sliced Chioggia beets (cooked)
- Italian dressing
