Summer Lettuce and Radish Salad
Here’s a quick, healthy salad that is perfect for the hot summer months. Most of these fresh ingredients are easy to acquire from our week to week CSA shares. This salad is full of nutrients and healthy fats, and protein if you choose!
What you need:
-2 Cups Romaine, Gourmet Blend Lettuce and New Red Fire Lettuce Mix
-2 Breakfast Radishes, sliced
-1 bunch of Chives, sliced
-1/4 Cup Sunflower Seeds
Dressing - Lemon Vinaigrette
-1/3 Cup Extra Virgin Olive Oil
-1/4 Cup fresh squeezed Lemon Juice
-Salt and pepper, to taste
*Note add more ingredients, like quinoa or grilled chicken to make this meal more filling!
1. Combine the base ingredients in a big salad bowl.
2. Mix the dressing and toss with the base ingredients.
