What you need:

-1.5-2 lbs. Kohlrabi

-1 tbsp. potato flour/or another alternative flour

-2-4 tbsp. olive oil

-optional seasoning: sea salt/chili powder/ground cumin/curry powder/paprika

What to do:

1. Cut of outer skin of kohlrabi and cut into thick sticks. These should be the size of larger french fries or potato wedges.

2. Warm olive oil over medium-high heat in a cast iron skillet.

3. Season flour with salt in a large bowl. Coat kohlrabi sticks with flour salt mixture.

4. Place sticks in hot oily pan and allow to cook evenly on both sides. Each stick should only have to cook for about 5 minutes total. Once cooked, transfer sticks to paper towels on cooking racks.

5. Add seasoning to sticks immediately and enjoy hot off the skillet!
