CCF Breakfast Burrito

Breakfast Burrito

What you need: 

-thinly sliced CCF potatoes
-chopped bell peppers
-chopped onion
-spinach
-scrambled eggs
-whole wheat tortilla 
-optional toppings: guacamole, salsa, spices etc.

Directions: 
  1. In a pan, heat up potatoes with olive oil and salt and allow to fry for about 10 minutes or until golden brown.
  2. Meanwhile scramble eggs and add in any desired spices.
  3. Sauté peppers, spinach and onions in a separate pan. 
3.   Heat up tortilla in pan until edges turn light brown.
4.   Allow everything to cool for a few minutes and then build burrito with desired toppings. Wrap in tin foil to keep warmer for longer! Enjoy :)
