Carrot Green Chimichurri!
Serves: about 1 cup
1 cup carrot greens (finely chopped)
2 teaspoons dried oregano
¼ teaspoon cumin
1 teaspoon ground sweet paprika
½ teaspoon crushed red pepper flakes
1 garlic clove (minced)
1 teaspoon salt
pepper to taste
¼ cup white wine vinegar
¼ cup olive oil
Wash and dry your carrot greens well.
Pair with roasted veggies, toasted bread, or over grilled fish or meat.
